A Soup That Feels Like a Reset
What I love about this soup is how gentle it is. Nothing loud. Nothing complicated. Just celery, onions, potatoes, herbs, and chicken coming together in a clear broth that feels restorative.
The star anise is optional, but I love the soft warmth it brings — not sweet, not overpowering, just a whisper of something comforting.
Ingredients
- 2–3 celery stalks, chopped
- 1 medium onion, sliced or diced
- 5–8 whole peppercorns
- 1–2 bay leaves
- A few sprigs of fresh thyme
- Salt, to taste
- 1–2 potatoes, chopped into small cubes
- Chicken (legs, thighs, or breast — whatever you have)
- Chicken broth (enough to cover everything)
- 1 whole star anise
How to Make It
1. Start with the aromatics
Warm your saucepan over medium heat. Add a little oil or butter.
Sauté the onions until they soften and turn translucent.
Add the celery and let it cook for another minute.
2. Add the chicken
Place the chicken pieces into the pot.
Let them brown lightly on each side — this step deepens the flavor without adding heaviness.
3. Build the broth
Drop in the peppercorns, bay leaves, thyme, and star anise.
Let them warm in the pot for 30 seconds so the aroma blooms.
4. Add potatoes and broth
Add the chopped potatoes.
Pour in chicken broth until everything is comfortably covered.
Season with salt.
5. Simmer gently
Bring the pot to a soft boil, then reduce the heat.
Let it simmer until the chicken is tender and the potatoes are soft.
Remove the star anise after 10–15 minutes so the flavor stays delicate.
6. Finish and serve
Taste and adjust the salt.
Remove the bay leaves and thyme stems.
Shred the chicken if you like a rustic texture.
Serve warm, with a squeeze of lemon or a sprinkle of fresh herbs.
