Comforting Three-Cheese Mac and Crispy Fish Recipe

with Crispy Fish Fillet. It comes with fresh coleslaw.
Some meals feel like a hug — creamy, colorful, and satisfying without being complicated. This three‑cheese mac and cheese brings richness. The veggies add brightness. The crispy fish fillet with fresh coleslaw turns it into a whole, feel‑good plate. Perfect for weeknights, weekends, or whenever you want something cozy and nourishing.

Ingredients
Mac & Cheese (Three‑Cheese + Veggie)

  • 2 cups elbow macaroni (or any short pasta)
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups milk
  • Three cheeses:
  • 1 cup sharp cheddar
  • ½ cup mozzarella
  • ½ cup Parmesan
  • 1 cup mixed veggies (peas, carrots, broccoli — fresh or frozen)
  • ½ tsp garlic powder
  • Salt + pepper to taste

Simple Coleslaw

  • 2 cups shredded cabbage (green or mixed)
  • ½ cup shredded carrots
  • 2 tbsp mayo
  • 1 tbsp lemon juice or vinegar
  • 1 tsp sugar
  • Salt + pepper

Instructions

  1. Make the Three‑Cheese Veggie Mac
  2. Cook pasta according to package directions. Add veggies to the pot during the last 2 minutes. Drain and set aside.
  3. In a pot, melt butter over medium heat. Whisk in flour to form a smooth paste.
  4. Slowly pour in milk, whisking until the sauce thickens.
  5. Add cheddar, mozzarella, and Parmesan. Stir until creamy.
  6. Season with garlic powder, salt, and pepper.
  7. Fold in the pasta and veggies. Let it sit on low heat for 1–2 minutes so everything melts together.
  1. Prepare the Crispy Fish Fillet
  2. Season fish with salt, pepper, and paprika.
  3. Dip each fillet into the beaten egg, then coat with breadcrumbs.
  4. Pan‑fry in a little oil until golden and cooked through or bake at 400°F for 12–15 minutes.
  5. Let rest for a minute before serving.

  2. Combine cabbage and carrots in a bowl.
  3. Stir together mayo, lemon juice, sugar, salt, and pepper.
  4. Toss everything until lightly coated — creamy but still crisp.

How to Serve
Scoop a generous serving of the three‑cheese veggie mac onto your plate. Add a warm, crispy fish fillet on the side. Finish with a spoonful of fresh coleslaw for crunch and brightness.
