Simple Egg Sandwich with Mango Twist Drink

Some meals don’t need a long story—they are the story. This egg sandwich is one of those quiet comforts. It’s fresh, layered, and full of flavor that doesn’t shout—it whispers. I make it when I want something simple and satisfying. It feels like a soft reset in the middle of the day.

Ingredients That Keep It Real

  • 2 boiled eggs, sliced
  • A handful of fresh watercress
  • A few slices of onion
  • A pinch of seasoning salt
  • 1 tablespoon mayonnaise
  • A few spinach leaves, finely sliced
  • half tomato slice
  • ½ teaspoon minced garlic
  • Butter lettuce leaves (used as a wrap or flatbread)

How I Build It
I start by laying out the butter lettuce like a soft, green canvas. Then I layer in the sliced eggs, onion, spinach, and garlic. A touch of mayo brings it all together, and the seasoning salt adds just enough edge. It’s not fancy—it’s intentional. Every bite is fresh, textured, and grounding. You can fold it like a wrap or stack it open-faced. Either way, it’s a moment of ease.

Sip & Savor: My Mango Twist Drink
To go with it, I blend one ripe mango. I also add a few chunks of watermelon. I add a drizzle of syrup or honey—just enough to brighten it, not overwhelm it. The result is a drink that’s juicy, cooling, and just sweet enough. It’s the pairing that makes you pause, breathe, and enjoy the moment.
