Homemade Salmon Sandwich and Strawberry Drink

Some meals feel like a pause. A breath. A way to nourish yourself without rushing or performing. This salmon sandwich is one of those meals—simple, vibrant, and layered with texture and flavor. It’s the lunch that doesn’t ask much of you, but gives plenty in return.

I like mine with crisp greens, juicy tomatoes, and a swipe of homemade mayo. Served with a strawberry-lemon drink that tastes like sunshine.

Ingredients I Reach For
For the sandwich:

  • Salmon, cut into portions and lightly seasoned
  • Iceberg lettuce, for crunch
  • Arugula, for peppery brightness
  • Onion, sliced thin
  • Tomato, ripe and juicy
  • Bread of choice—toasted if you like texture, soft if you want comfort
  • Homemade mayo—a simple blend of egg yolk, oil, lemon juice, and a pinch of salt (or use your favorite base and add garlic, herbs, or mustard to make it your own)

For the drink:

  • Strawberries, fresh or frozen
  • Lemon juice, freshly squeezed
  • Sweetener of choice—honey, sugar, or stevia
  • Water or ice, to blend

How I Make It

  1. Cook the salmon gently in olive oil until golden and flaky. Let it rest while you prep the sandwich layers.
  2. Toast the bread if you like a little crunch. Spread each slice with your homemade mayo.
  3. Layer the greens, onion, tomato, and salmon. Press gently to hold it all together.
  4. Blend the drink—strawberries, lemon juice, sweetener, and water or ice until smooth. Taste and adjust.

Why It Matters
This isn’t just a sandwich—it’s a way to slow down. To choose ingredients that feel good in your body. To create something nourishing without overthinking it.
Food, for me, is a form of presence. A way to honor the moment, the season, and the quiet joy of making something with care.
