Ingredients:
- 2 handfuls baby spinach
- 1 ripe mango, diced
- ½ cucumber, thinly sliced
- 8 radishes, sliced
- 1 small red onion, finely sliced
- 2 avocados, cubed
- 100g feta, crumbled
- Fresh herbs: mint, basil, and coriander (a small bunch of each)
- Optional: black beans (for protein boost)
Dressing:
- 100ml rapeseed or olive oil
- Juice and zest of 2 limes
- 2 tbsp white wine vinegar
- 2 tsp honey
- 1 garlic clove
- 1 green chili (deseeded)
- Salt to taste
Instructions:
- Blend all dressing ingredients until smooth. Chill if prepping ahead.
- On a large platter, layer spinach, mango, cucumber, radish, and onion.
- Gently toss with avocado, feta, and herbs.
- Drizzle with dressing just before serving.
