🥗 Sun-Kissed Summer Salad with Mango, Feta & Herbs

Ingredients:

  • 2 handfuls baby spinach
  • 1 ripe mango, diced
  • ½ cucumber, thinly sliced
  • 8 radishes, sliced
  • 1 small red onion, finely sliced
  • 2 avocados, cubed
  • 100g feta, crumbled
  • Fresh herbs: mint, basil, and coriander (a small bunch of each)
  • Optional: black beans (for protein boost)

Dressing:

  • 100ml rapeseed or olive oil
  • Juice and zest of 2 limes
  • 2 tbsp white wine vinegar
  • 2 tsp honey
  • 1 garlic clove
  • 1 green chili (deseeded)
  • Salt to taste

Instructions:

  1. Blend all dressing ingredients until smooth. Chill if prepping ahead.
  2. On a large platter, layer spinach, mango, cucumber, radish, and onion.
  3. Gently toss with avocado, feta, and herbs.
  4. Drizzle with dressing just before serving.

This salad is a sensory story in itself—sweet mango, creamy avocado, tangy feta, and a citrusy herb kick.
