Quick and Healthy Breakfast with Spinach

A warm, grounding breakfast made with soft scrambled eggs, fresh spinach, and toasted sourdough. Simple ingredients, gentle flavors, and a cozy start to the day.

Ingredients

  • 1 slice sourdough bread
  • 1–2 eggs
  • Small handful of fresh spinach
  • 1 tablespoon butter (or olive oil)
  • Salt + cracked black pepper
  • Optional: pinch of garlic powder or red pepper flakes

Step‑by‑Step Instructions

  1. Toast the sourdough
    Place your slice of sourdough in the toaster or on a hot pan until golden and crisp. Set aside.
  2. Warm the spinach
    In a small pan over medium heat, add a tiny bit of butter or oil.
    Add the spinach and cook for 20–30 seconds, just until it softens.
    Remove from the pan and set aside.
  3. Soft scramble the eggs
  • Lower the heat to medium‑low.
  • Add the remaining butter to the pan.
  • Crack in the eggs and gently stir with a spatula, moving slowly to keep them creamy.
  • Cook until just set — soft, silky, and still a little glossy.
  • Season with a pinch of salt.
  1. Assemble the toast
  • Place the warm spinach on top of the toasted sourdough.
  • Spoon the soft scrambled eggs over the greens.
  • Finish with cracked black pepper.
  1. Serve + enjoy
    Enjoy warm with a cup of herbal tea or fruit on the side.
    A simple, nourishing breakfast that takes only minutes but feels grounding and intentional.
